The Tre Galline restaurant menu wants to reflect its spirit, and for this reason its focused mostly on Piedmont wines: from the bubbles of Alta Langa to the usual methods produced by indigenous grapes like the sparkling wine of Cortese di Gavi; from a good selection of regional white wines, between native and international varieties without neglecting the wine tradition of the most important wine regions of Italy.

As for the red wines, obviously, more space is devoted to the main grape vine in Piedmont, the Nebbiolo. Available in all its forms and facets, large space is given to Barolo and Barbareschi, without forgetting the important areas of the Piedmont like Gattinara, Carema, Bramaterra and other names. Barbera is an excellent choice too, to which is added vines of our tradition such as Dolcetto, Freisa, Grignolino and Pelaverga.
The presence of internationally renowned names matched to small producers transforms this menu in an interesting overview of the oenological reality of Piedmont.

In the chapter devoted to red wines, other important areas of Italy are also explored – with a fine selection of wines from Alto Adige to Sicily, passing through Tuscany, from traditional Chianti and Brunello di Montalcino, to contemporary Super Tuscans.
